HawkHUB’s executive board had their first meeting during the fall of 2019. The organization was founded by Maddie DeMarco ’22 who created HawkHUB after learning more about other college resource centers. She wanted to bring a similar concept to the St. Joe’s community. HawkHUB was set to launch after the 2020 spring break, but because of the global pandemic, the launch had to wait.
Today, HawkHUB serves as a safe place for all St. Joe’s community members to go and receive basic essentials. The goal is to minimize food and basic needs insecurity on campus and make sure all members of the community feel validated.
Each Monday, HawkHUB posts “Meal Prep Mondays,” highlighting meals community members made from ingredients in the HUB.
The Hawk staff asked the executive board of HawkHUB for their best cooking or grocery shopping advice and their favorite recipes.
What is your best piece of cooking or grocery shopping advice for college students?
It’s always good to have the essentials on hand which is why HawkHUB is so important. We’ll have your can of beans or tomatoes, all the things I feel like [are] so easy to throw together a meal really quick, especially at night, or for the week. Meal prepping as a college student, I think it is important to always have those essentials.

What is your favorite recipe to make with the ingredients found in HawkHub?
I like making chipotle bowls because [the HUB has] beans and rice and sometimes fresh vegetables. Plus, all the spices you would ever need. You can say that there’s a lot of taco seasoning. You can make all sorts of different things.

What is your best piece of cooking or grocery shopping advice for college students?
Before you go grocery shopping, plan out all the things that you want to make for lunch, dinner and breakfast. I often find myself going to the grocery store and not even knowing what to buy because if I don’t plan what I’m going to cook then I’m like, ‘Oh, what am I gonna make?’

What is your best piece of cooking or grocery shopping advice for college students?
Definitely buy the generic brands because it’s going to taste the same, and you’ll save money. People think that you need to buy the highest quality of a certain ingredient or the best brand or whatever the name brand, [but it] just doesn’t matter.
